PENANG LAKSA LEMAK PASTE

Cooking Instructions:

For every 1kg paste,

Step 1: Add paste into pot with low heat and stir for 5 mins

Step 2: According to preference, add in additional spices or herbs e.g. curry leaf, lime leaf, etc (Optional)

Step 3: Add in 1.5kg coconut milk, stir for 5 mins

Step 4: Add in 1kg filtered water (Optional, amount will vary)

Cook for a further 15 mins before done

Recommended Portioning:

1kg paste: 20 individual portions

NYONYA KAPITAN PASTE

Paste Only. Additional cooking required

Cooking Instructions:

For every 1kg paste,

Step 1: Add paste into pot with low heat, stir for 5 mins

Step 2: According to preference, add in additional spices or herbs e.g. curry leaf (Optional)

Step 3: Add Chicken**, mix well for 15 mins to allow kapitan flavour to mix well with chicken

Step 4: Add 800g coconut milk

Step 5: Add 800g filtered water
(Optional, amount will vary)

Step 6: Cook for a further 10 mins before done

Step 7: Check that chicken is fully
cooked. Otherwise allow to cook for longer time

Recommended Portioning:

3.5kg of boneless chicken or 12 quarter leg chicken pcs

(equivalent to 24 drumsticks or thigh pcs)

GREEN CURRY PASTE

Cooking Instructions:

For every 1kg paste,

Step 1: Add paste into pot with low heat, stir for 5 mins

Step 2: According to preference, add in additional spices or herbs e.g. curry leaf, lime leaf etc (Optional)

Step 3: Stir well for 15 mins

Step 4: Add 1kg coconut milk

Step 5: Add 500g filtered water
(Optional, amount will vary)

Step 6: Cook for a further 10 mins before done

Recommended Portioning:

3.5kg of beef slices or boneless chicken

Step 1: Add paste into pot with low heat, stir for 5 mins

Step 3: Stir well for 15 mins

Step 5: Add 600g filtered water (Optional, amount will vary)

Step 6: Cook for a further 10 mins before done
